Because in my 20s I probably consumed enough sugar to last me a lifetime and since have learned about the negative effects it has on our body, I’ve been avoiding sugar (in its refined form) for over 5 years now.
Does this mean that I don’t eat sweets? Nope.
Do I ever eat desserts at a restaurant? I sure do.
It doesn’t have to black or white. I’m all for enjoying food and celebrating it with others, but sugar does not have control over me anymore because I no longer consume it on a regular basis (see previous post ‘Sugar – how bad is it really?‘).
Today, I opt for options that are unrefined, natural and above all nourishing – after all, that is what food is supposed to be!
Here is one of my favorite recipes that opened up a whole new world for me back in the days. It’s quick, easy and only requires 3 ingredients. Double the recipe to always have some in your freezer for when cravings kick in. I promise you won’t be able to eat just 1!

3 INGREDIENT CHOCOLATE
Yes, it’s that simple! The best part, it tastes even better than the store bought stuff and you can make it with ingredients that are already in your pantry (and if they aren’t, they absolutely should be!).
5 INGREDIENT CHOCOLATE CARAMEL CUPS
Warning: these almond butter cups are slightly addictive. Make sure to eat when nobody else is around as you won’t want to share. You have been warned.
Mix the cacao, coconut oil, maple syrup and salt in a bowl. Pour half of the chocolate mixture into cupcake liners. Place in freezer for about 15 minutes to harden.
Meanwhile, blend the raw almond butter with the dates and salt. You’ll need to add water to smoothen the mixture.
Remove chocolate from freezer and add about 1 tsp of caramel on top of the first chocolate layer. This can get a bit messy, but it’ll still taste just as good!
Pour remaining chocolate over the caramel. Make sure everything is covered. Place back in the freezer for at least 30 minutes. Store in freezer and eat cold to avoid a big mess in your kitchen.
