Fool-Proof Veggie Side Dish
This 'recipe' for making a fool-proof veggie side dish is not meant to reinvent the wheal. It is meant to be a source of inspiration to make cooking and eating vegetables easier and less of a task because one thing we could all do to improve our health is eat more veggies.
We are often intimidated by that thought and at a loss because many of us don't like to cook, let alone try to be creative in the kitchen to make a carrot or turnip taste more exciting. For some reason when we think of eating more veggies, we think they have to be fat free and bland. This is not true! If you're going to fill half of your plate with vegetables at every meal (in an ideal world), let's make them fun and drool-worthy!
I personally don't love spending lots of time in the kitchen, so whenever I do cook, I love making quick and easy recipes that are super flavourful. Enter roasted vegetables.
This is literally what I do when making roasted veggies:
I've even added olives, apples and pears which make for delicious flavour combinations. Be creative and don't be afraid!
You'll see in the pictures that we use lots of potatoes and yams. That's because we are vegetarian and runners and require the fuel. You can however stick to lighter veggies such as broccoli, cauliflower, peppers, tomatoes, turnips, mushrooms, etc.
To save even more time, simply add your protein in with the veggies as well and you just cooked yourself a full meal!
