APPLE CINNAMON PANCAKES
These apple cinnamon pancakes are a great addition to blissful pancake Sundays. It seems like on Sunday mornings the world is a better place because everybody gets to eat their favorite pancakes.
To be honest, I’d much rather eat a savory breakfast on weekends (avo on toast, eggs, Shakshouka, breakfast burrito). My dear clients however, always request pancakes that are low carb or gluten and dairy free – so here is one of the pancake recipes I share with them.
As should be, this balanced breakfast is not only nutritious, but also blood sugar stabilizing and filling:
-1 cup of oatmeal provides close to 12g of protein as well 9g of fiber
-6 egg white are a source of will provide you with 26g of oatmeal
-Coconut cream and oil is a great source of healthy fats which will help stabilize your blood sugar and keep you feeling full longer
-Cinnamon also helps stabilize blood sugar (a m a z i n g !)
-The apple is also a great source of blood sugar stabilizing fiber
APPLE CINNAMON PANCAKE RECIPE
1. In a blender, combine oatmeal, egg whites, coconut cream, cinnamon and honey; process until smooth. Add baking powder and process briefly, just enough to mix it in.
2. Stir in chopped apple by hand.
3. Coat a medium nonstick skillet with coconut oil and heat over low flame. Pour ½ cup pancake batter into pan. When pancake is golden underneath (use spatula to peek), flip and cook for a few minutes on other side.
4. Transfer cooked pancake to a plate, and repeat process with remaining batter to make 4 pancakes. Serve with dark maple syrup, berries, figs, raw honey, grass fed butter, coconut oil or a dusting of cinnamon.
Nutrition tip: When eating sweet breakfast, always ensure to add a good dose of cinnamon to the recipe as it helps regulate blood sugar.
