*Why Soak Nuts? It is recommended that nuts are soaked overnight or for at least 4 hours prior to consuming or cooking as it makes them easier to digest and nutrients become more available.
When buying nuts, make sure you are purchasing raw, unflavoured and unsalted nuts, preferably at a bulk store with high turnover to ensure freshness as oils can become rancid. If you don't have a bulk store available, bagged nuts are fine too.
Always store nuts in the fridge because they have temperature sensitive oils that need refrigeration in order to stay fresh.
